Quick Bruscetta



Simple Snack


Do you make your own bruscetta? It is such a simple and easy snack. You need very little in the way of time or ingredients. Probably ten minutes preperation and ten minutes cooking, (and can be put in the fridge when assembled and the final cook time done at any time within the next day or two).


You will need ...

A few thickly cut slices of bread (it can be quite stale).
Brush both sides with olive oil and put on baking tray in the oven until golden brown.
Meanwhile chop some tomatoes, onion, peppers, garlic, and fry gently until soft in olive oil.
Top the cooked bread with the mixture and put back in the oven for ten minutes.
Sprinkle chopped herbs on the top and season well.
Also can be topped with a balsamic glaze or spoon of pesto if available.

I really love these easy vegetarian snacks as they can be left in the fridge until needed (we have a lot of vegetarians in the family). It is nice to be able to offer something quick other than biscuits or cake.
