Some Easy Cooking

Yummy snack




 
Needing to cook some vegetarian snacks very quickly I settled on vegetable pasties. The pasties are just too simple and only take around thirty minutes from start to finish. I often make them from left over vegetables from the day before (good for lunch boxes)  ...




Ingredients ...

Ready roll puff pastry
1 potato
1 carrot
1 parsnip
1 onion
Handful of peas
1 stock cube
Egg
Seasoning (I added salt and pepper and a spoonful of ketchup)

Method ...

Chop all vegetables in small pieces and mix the stock cube with a little water.
Place all ingredients in microwave or saucepan and cook until just tender.
There should be just the tiniest amount of liquid.
Season well and thicken if necessary.
Roll pastry and cut into six squares.
Fill the centre of each square with a spoonful of the mixture.
Fold corners in and seal with beaten egg.
Glaze top with more beaten egg.
Season top with sea salt and black pepper.
Cool in fridge until needed.
Place in hot oven for fifteen minutes and until golden brown.

Ready for oven, brushed with egg and sprinkled with seasoning
