Quick And Easy Marmalade
I came upon a very quick and easy recipe for marmalade, which had excellent reviews and thought it would be perfect for some stocking fillers. I made eight jars from just six oranges, one lemon and one lime, plus a kilo bag of sugar and it really did take well under one hour.
Recipe
Take six or eight citrus fruits.
Cut into quarters and remove all pips.
Peel one orange and cut into thin strips.
Place the remaining fruit - peel and all - into a food processor and whizz until required thickness.
Put this mixture in a heavy bottomed pan along with the sugar and thinly cut peel and boil gently for about twenty minutes.
Stir gently with a wooden spoon - beware of very hot splatters!
Put into sterilised jars, seal and label.
Enjoy!
I also managed to marzipan and ice my Christmas cake (with far too much help from the little fairy people). This was my first attempt (and last) at cake decoration and although the simplest details were chosen it looked dreadful - hopefully the cake itself tastes good.
