Vegeburger

Beetroot Vegeburger


Today I am having a bedroom wall plastered. The mess from the plaster dust is pretty unpleasant but the workmen are so nice I decided to make them some burgers for lunch. This is a fairly common lunch in my house as we usually have some M nd S burgers and buns in the freezer and always plenty of salads in the fridge. I have just been told that one of them does not eat meat so I have been busy making some vegetable burgers. I am surprised at how easy they are, how good they look, and most of all just how delicious they are.

The ingredients are easy and very interchangeable with anything you may have in the fridge. I used -

1 raw beetroot
1 onion
1 carrot
1 apple
1 clove garlic

Place all the above ingredients into a food processor and roughly chop. Now tip into a large bowl.


Add all the following ingredients and mix thoroughly together.

Cup of breadcrumbs
Cup of porridge oats
Tablespoon of made mustard
2 tomatoes - finely chopped
Tablespoon sweetcorn relish
Flour to bind
Fresh salt and pepper
Handful fresh herbs

The consistency should be quite firm.  If still a little sloppy add some flour to bind and if too thick add an egg until a firm but pliable consistency is reached. Shape into patties, roll in flour and then chill for a while in the fridge. Now either bake in the oven on a greased sheet or fry or cook (as I do) on a griddle. The above ingredients made six burgers.


Yummy


Serve in a bun or on a bed of salad.

I also tried a curried variation of the above using different ingredients -


Handful green beans
Handful spinach
Tin chickpeas
2 Tomatoes
Cup porridge oats
1 Tablespoon curry powder
1 Tablespoon mango chutney
Fresh salt and pepper
Handful fresh herbs



And this is what they looked like ...







This quantity also made six - I ate one and it was very yummy!
